I’m excited to be
sharing it here with you today.
This soup is one that I turn to time and again,
because it’s easy, it’s full of flavor, and my family loves it.
I enjoy making it because not only does it smell divine, but it brings some much needed color into these gray and dreary European days.
It’s just a fun, happy, soup.
Isn’t it amazing how food can do/be that?
So as you make this for yourself,
think fun happy, thoughts and well…
The Easiest Chicken Tortilla Soup
1 Rotisserie Chicken, shredded
¼ – ½ pack taco seasoning
(or use your own, I have a recipe that I like to use, more on that later)
3 Tablespoons butter
1 Spanish onion, finely chopped
1 orange pepper, chopped
1 yellow pepper, chopped
1 habanero pepper, finely chopped
1/2 bunch cilantro, chopped
4 cloves garlic, minced
1 teaspoon cumin
1 teaspoon smoked paprika
1 teaspoon oregano
1/2 teaspoon cayenne pepper
3 Tablespoons flour
32 oz chicken stock
2 cups light cream
1 can kidney beans, drained
1 can black beans, drained
1 can rotel
1 cup frozen corn kernels
Sauté onions, pepper, and garlic in the butter
over medium heat, cook until fragrant about 5 minutes.
Once you can smell the garlic and onions (trust your nose),
add the spices & flour,
cook for a few
(about 1-2 minutes longer)
Once this is done, add your liquids (the broth and cream),
if you feel like you should add the liquids sooner, go ahead,
and at any time during this process, you taste your soup and feel like it needs salt,
add it. Not a lot, but just enough to enhance the flavors that are already there.
Bring the soup to a simmer and then reduce the heat.
Add the rest of the ingredients, then simmer for
30 – 40 minutes. You want the flavors and the ingredients to marry well.
Serve in a bowl over your favorite tortilla chips
garnish with plenty of shredded cheese, salsa, sour cream, and fresh avocado
or the toppings of your choice!
