Autumn Pumpkin Soup

Last night I hosted a book club for the first time…

Me. The introvert.

Guys…

This is big.
HUGE EVEN.

I totally invited strangers into my house
on purpose and I cooked.

The best part about all this?

I had fun.

I laughed so hard.
It was a blast!

I can’t wait to host another one.

Want to know what we’re reading?

Sure you do…

We’re reading

Kate Morton’s Distant Hours

&

Mary Shelley’s Frankenstein

I’m pretty stoked about this.

Honestly, I’m more stoked about meeting up with these ladies again.

It really was fun…

You want to know what else was fun?

Making this soup!

It was too easy.

Autumn Pumpkin Soup Deliciousness

Y’all…

Ingredients
2 cans of pure pumpkin
(I used 2 small cans, but if you like pumpkin go on & use 3)
3 Tbsp Curry Powder
2 (13.5) cans coconut milk
32oz vegetable broth
1-2 tablespoons of agave syrup
1 tsp cinnamon
Salt (to taste)

Optional
I had some chives from my herbs, some Gouda pictured,
and a bit of turkey from this post.

Directions
Take out your crock pots and put this bad boy on low for few hours or high for about 3-4…

Not only will your house smell like heaven, but this soup… It tastes divine…

There’s something about fall…

Leaves changing., the cooler temps
making things cozy,
and then this soup that

Almost… Almost…
Just a little bit
Tastes
Like…
Home.

Until Next Taste,
Lori

  1. Wow this soup sounds so delicious. I love the combinations of pumpkin, curry and coconut. It must be bursting with flavor. I’ve been in a book club before, they are a lot of fun even for us introverts.

  5. This soup looks fantastic! Now that it’s a bit chillier out, soup is on the menu at least once a week in our home!
