Ground Turkey Lettuce Wraps

This meal is a go-to quick one for our family of 6. Not only is it delicious, but it’s healthy as well, and… The kids love it. That alone makes it a no-brainer win in my book.

I knew I would share it here, but I wasn’t sure when… Then I thought well…. It’s a favorite and an easy one so why not go with it.

So… Here it is.

Ground Turkey Lettuce Wraps
Ingredients
Lettuce, washed and separated
1 pound ground poultry (I used turkey)
5 cloves garlic, minced
(you may use less, 5 is my minimum, but really who uses less than 5 we can’t be friends.)
1 onion, chopped
1/4 cup of hoisin sauce
1 Tbsp soy sauce
1 Tbsp red wine vinegar
3 tsp sriracha
2 tsp fresh ginger, minced
1 bunch of green onions, sliced
salt & pepper, to taste

Optional Ingredients
1 can sliced water chestnuts, drained & chopped
(Mr. Foodie made me put this as optional… Ha!)

Directions

1. Season meat with the with salt and pepper, then cook until browned.
Drain it then set aside.

2. While the meat is set aside sauté the onions up a bit
to make them soft. My guy, (Mr. Foodie) isn’t the biggest fan of onions to begin with, so this is a compromise I make to have them in this dish because I love them. Ha!

3. Once the onions were sautéed, I added the meat back in,
then I also added the garlic, soy sauce, hoisin sauce, minced ginger,
sriracha, and the red wine vinegar.
I let that that cook for about 5 minutes, then added the green onions and if you add the water chestnuts this is when you add them as well, then let that cook for about 3-5 more minutes.

A quick, easy, healthy, and delicious weeknight family meal! One note I’d like to add… This meal is delicious vegetarian as well. It is awesome made with tofu or tempeh, both retain the flavors of this dish really well.

I didn’t know how to phrase it. I didn’t know the words to write, but I knew I wanted to introduce how rad my kids are and how amazing/difficult/frustrating/phenomenal/brilliant/beautiful/messy/fun this life they lead is, but… I didn’t have the right words…

They truly are the MVP’s. We move every couple of years, sometimes we move continents, sometimes we move states. Every few years they leave behind memories, friends, schools, family, and everything their little hearts know to start a new adventure and the most amazing part is they do it. They do it with eyes wide and hearts open to whatever they face. They are brave

They are little and brave heroes. I’m not sure that they know that, but they make me proud. They welcome the challenges, the language barriers, the new friends, the new schools, the new homes, the newness. Each and every time without fail, and they never cease to amaze me.

They are kind, they are loving to the children in their host country. They are amazing little diplomats. They represent where they come from with a grace and graciousness that astounds me… I watch them on the playground and I think of the lyrics from Louie Armstrong’s “What a Wonderful World”

Hello… Is it me…

So, this is kind of exciting and weird… It’s also odd. What’s even stranger…. Adele’s “Hello” is on in the background as I type this as if a sign that I should actually be typing this right now now.

So if the grandparents want updates… This is how they get them.

Gasp… That’s crazy talk. I know. I’m probably not the favorite anymore.

And… I’m okay with that.

It gives us more time.
